If using fresh apricots, wash, pit, and roughly chop them. Frozen apricots can be used directly from freezer.
Add apricots, Greek yogurt, honey, milk, and vanilla to a blender.
If using fresh apricots, add ice cubes. If using frozen, skip the ice.
Blend on high speed for 60-90 seconds until completely smooth and creamy.
Taste and adjust sweetness with additional honey if needed.
