Preheat oven to 375°F (190°C). Grease a baking dish.
Melt butter in saucepan, whisk in flour and cook 1 minute.
Gradually add cream, whisking until smooth and thickened.
Add garlic, thyme, nutmeg, salt, and pepper.
Layer artichokes in dish, pour sauce over, top with cheeses.
Bake 25-30 minutes until golden and bubbly.
Pat artichokes dry before layering to prevent watery gratin.
Add layers of sliced potatoes for a heartier dish, or mix in some spinach.
Store leftovers in refrigerator for up to 3 days. Reheat in oven until heated through.
