Refreshing cucumber salad with rice vinegar, sesame oil, and chili flakes. A perfect side dish for Asian meals.
Slice cucumbers very thin using mandoline or sharp knife.
Salt cucumber slices and let drain in colander for 20 minutes.
Rinse and pat dry with paper towels.
Whisk together rice vinegar, sesame oil, soy sauce, and sugar.
Toss cucumbers with dressing and red pepper flakes.
Let marinate 30 minutes in refrigerator.
Garnish with sesame seeds and green onions.
Serve chilled as a side dish.
