Asian Cucumber Salad

Ingredients

  • 2 large Cucumberssliced thin
  • 3 tbsp Rice vinegar
  • 1 tbsp Sesame oil
  • 1 tbsp Soy sauce
  • 1 tsp Sugar
  • 1/4 tsp Red pepper flakes
  • 1 tbsp Sesame seedstoasted
  • 2 Green onionssliced

Instructions

    Slice cucumbers very thin using mandoline or sharp knife.

    Salt cucumber slices and let drain in colander for 20 minutes.

    Rinse and pat dry with paper towels.

    Whisk together rice vinegar, sesame oil, soy sauce, and sugar.

    Toss cucumbers with dressing and red pepper flakes.

    Let marinate 30 minutes in refrigerator.
