Moist and delicious banana bread made with ripe bananas. Perfect for breakfast or snack time, this recipe never fails to impress.

Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large bowl, mash bananas with a fork until smooth.
Stir melted butter into mashed bananas.
Mix in sugar, beaten egg, and vanilla extract.
Sprinkle baking soda and salt over mixture and stir in.
Add flour and mix until just combined. Don't overmix.
Fold in walnuts if using. Pour batter into prepared loaf pan.
Bake for 55-65 minutes until toothpick inserted in center comes out clean.
Cool in pan for 10 minutes, then turn out onto wire rack.
Use very ripe bananas with brown spots for best flavor. Don't overmix the batter to keep bread tender. Bread freezes well for up to 3 months.
