Rich beef and mushroom stew with herbs

Ingredients

  • 2 lbs Beef stew meatcut into chunks
  • 1 lb Mixed mushroomssliced (cremini, shiitake)
  • 1.5 lbs Potatoescubed
  • 3 large Carrotssliced
  • 1 large Oniondiced
  • 4 cloves Garlicminced
  • 4 cups Beef broth
  • 1 cup Red winedry
  • 2 tablespoons Tomato paste
  • 2 sprigs Fresh rosemary
  • 3 sprigs Fresh thyme
  • 1/4 cup Flour
  • 3 tablespoons Olive oil

Instructions

    Toss beef with flour, salt, and pepper.

    Brown beef in oil in large pot, remove.

    Sauté mushrooms until golden, remove.

    Cook onion and garlic, add tomato paste.

    Add wine, broth, herbs, beef. Simmer 1.5 hours.

    Add vegetables and mushrooms, cook 45 minutes more.
