Beef stew topped with fluffy dumplings

Ingredients

  • 2 lbs Beef stew meatcut into pieces
  • 3 medium Potatoescubed
  • 4 Carrotssliced
  • 3 stalks Celerychopped
  • 1 large Oniondiced
  • 4 cups Beef broth
  • 2 cups All-purpose flourdivided
  • 1 tablespoon Baking powder
  • 1 teaspoon Saltdivided
  • 3/4 cup Milk
  • 3 tablespoons Buttermelted
  • 2 tablespoons Fresh parsleychopped
  • 2 tablespoons Vegetable oil

Instructions

    Toss beef with 1/4 cup flour, brown in oil in large pot.

    Add onion, cook until softened.

    Add broth, bring to boil, cover and simmer 1.5 hours.

    Add vegetables, cook 30 minutes more.

    Mix remaining flour, baking powder, salt, milk, and butter for dumplings.

    Drop dumpling batter on stew, cover and cook 15 minutes.
