Soak cedar plank in water for at least 2 hours.
Preheat grill to medium heat (about 350°F).
Mix brown sugar, mustard, dill, lemon zest, olive oil, salt, and pepper.
Place soaked plank on grill for 2-3 minutes until it starts to smoke.
Place salmon on plank and spread with mustard mixture.
Close grill and cook for 15-20 minutes until salmon flakes easily.
Remove plank with salmon and let rest 5 minutes before serving.
