Chicken and Rice Casserole

Ingredients

  • 4 Chicken breastsboneless, skinless
  • 1.5 cups Long grain riceuncooked
  • 3 cups Chicken broth
  • 2 cups Mixed vegetablesfrozen
  • 1 can Cream of mushroom soup
  • 1 packet Onion soup mix
  • 1 cup Mozzarella cheeseshredded

Instructions

    Preheat oven to 375°F (190°C).

    Mix rice, broth, soup, and onion soup mix in 9x13 dish.

    Add frozen vegetables and stir.

    Place chicken breasts on top.

    Cover tightly with foil and bake 45 minutes.

    Remove foil, top with cheese, bake 15 more minutes.
