Ingredients

  • 2 lbs Chicken breastscut into chunks
  • 1 can (14 oz) Coconut milk
  • 1 large Oniondiced
  • 4 cloves Garlicminced
  • 1 tbsp Gingerfresh, grated
  • 2 tbsp Curry powder
  • 1 tsp Turmeric
  • 1 can (14 oz) Diced tomatoes
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Instructions

    Heat oil in large skillet. Sauté onion until soft.

    Add garlic and ginger, cook 1 minute.

    Stir in curry powder and turmeric.

    Add chicken and brown on all sides.

    Add tomatoes and coconut milk.

    Simmer 20 minutes until chicken is cooked through.

    Season with salt and pepper.
