Chicken Enchilada Casserole

Layered Mexican casserole with chicken, tortillas, and enchilada sauce. All the flavors of enchiladas in an easy casserole.

Ingredients

  • 3 cups Cooked chickenshredded
  • 8 Flour tortillas
  • 2 cans (10 oz each) Enchilada sauce
  • 2 cups Mexican cheese blendshredded
  • 1 can Black beansdrained and rinsed
  • 1 cup Cornfrozen
  • 1 cup Sour cream
  • 4 Green onionssliced

Instructions

    Preheat oven to 375°F (190°C). Grease 9x13 inch dish.

    Mix chicken with 1/2 cup enchilada sauce.

    Place 4 tortillas in bottom of dish.

    Layer with chicken mixture, beans, corn, and half the cheese.

    Top with remaining tortillas and enchilada sauce.

    Sprinkle with remaining cheese.

    Bake 25-30 minutes until bubbly.

    Serve with sour cream and green onions.
