Ingredients

  • 500g Chicken breastsliced thin
  • 2 tbsp Vegetable oildivided
  • 2 Bell pepperssliced
  • 2 cups Broccoli floretsfresh or frozen
  • 1 large Carrotjulienned
  • 3 Garlic clovesminced
  • 1 tbsp Gingerfresh, minced
  • 3 tbsp Soy saucelow sodium
  • 2 tbsp Honey
  • 1 tbsp Rice vinegar
  • 1 tsp Cornstarchmixed with 2 tbsp water
  • 2 Green onionssliced for garnish

    Heat 1 tbsp oil in a large wok or skillet over high heat.

    Add chicken and stir-fry for 3-4 minutes until golden. Remove and set aside.

    Add remaining oil to pan. Stir-fry vegetables for 3-4 minutes until crisp-tender.

    Add garlic and ginger, stir-fry for 30 seconds until fragrant.

    Mix soy sauce, honey, and rice vinegar. Return chicken to pan.

    Add sauce and cornstarch mixture. Toss until everything is coated and sauce thickens.
