Authentic Chinese fried rice with eggs, vegetables, and aromatic seasonings. Perfect for leftover rice.

Heat 1 tbsp oil in large wok or skillet over high heat.
Add beaten eggs and scramble. Remove and set aside.
Add remaining oil to wok. Add garlic and ginger, stir for 30 seconds.
Add peas and carrots, stir-fry for 2 minutes.
Add rice, breaking up clumps with spatula.
Stir-fry rice for 3-4 minutes until heated through.
Return eggs to wok, add soy sauce, sesame oil, and white pepper. Garnish with green onions.
