Moist and tender banana bread loaded with ripe banana flavor. Perfect for breakfast or as a snack.
Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Mash bananas in large bowl until smooth.
Mix in melted butter, sugar, egg, and vanilla.
In separate bowl, whisk flour, baking soda, and salt.
Fold dry ingredients into banana mixture until just combined.
Fold in walnuts if using.
Pour into prepared pan and bake 60-65 minutes.
Test with toothpick - should come out clean. Cool before slicing.
