Cook pasta according to package directions. Reserve 1/2 cup pasta water.
Heat butter and olive oil in a large skillet over medium-high heat.
Add onions and cook until softened, about 3 minutes.
Add garlic and mushrooms, cook until mushrooms are golden, 8-10 minutes.
Add white wine (if using) and cook until reduced by half.
Pour in cream and bring to a gentle simmer.
Add cooked pasta and toss with sauce.
Stir in Parmesan cheese and fresh thyme.
Season with salt and pepper. Serve immediately.
