Cucumber Gazpacho

Ingredients

  • 3 large English cucumberspeeled and chopped
  • 1 cup Greek yogurt
  • 1/4 cup Fresh mintchopped
  • 2 tbsp Lime juicefresh
  • 1 clove Garlicminced
  • 2 tbsp Olive oilextra virgin
  • 1/2 tsp Salt
  • 1/4 tsp White pepper

Instructions

    Roughly chop cucumbers and place in blender.

    Add yogurt, mint, lime juice, and garlic.

    Blend until smooth and creamy.

    With blender running, slowly drizzle in olive oil.

    Season with salt and white pepper.

    Chill for at least 2 hours before serving.
