Cucumber Sandwiches

Classic English cucumber sandwiches with herb cream cheese. Perfect for afternoon tea or light lunch.

Ingredients

  • 1 large English cucumberthinly sliced
  • 8 slices White breadcrusts removed
  • 4 oz Cream cheesesoftened
  • 2 tbsp Fresh dillchopped
  • 1 tbsp Fresh chiveschopped
  • 1 tsp Lemon juice
  • 1/4 tsp Salt
  • pinch White pepper

Instructions

    Slice cucumber very thinly and lay on paper towels. Salt lightly and let drain 15 minutes.

    Mix cream cheese, dill, chives, lemon juice, salt, and pepper.

    Spread herb cream cheese on all bread slices.

    Pat cucumber slices dry and arrange on 4 slices of bread.

    Top with remaining bread slices.

    Trim crusts with sharp knife.

    Cut into triangles or rectangles.
