Ingredients

  • 3 lbs Beef chuck roastcut into 2-inch pieces
  • 1 bottle (12 oz) Guinness beer
  • 2 cups Beef stock
  • 2 lbs Potatoesquartered
  • 1 lb Carrotscut into chunks
  • 2 large Onionssliced
  • 4 cloves Garlicminced
  • 2 tablespoons Tomato paste
  • 3 sprigs Fresh thyme
  • 2 Bay leaves
  • 1/4 cup Flourfor coating
  • 2 tablespoons Butter
  • To taste Salt and pepper

Instructions

    Toss beef with flour, salt, and pepper.

    Brown beef in batches in large Dutch oven.

    Add onions and garlic, cook until softened.

    Add tomato paste, beer, stock, thyme, and bay leaves.

    Simmer covered 1.5 hours, add vegetables, cook 45 minutes more.

    Remove bay leaves and thyme sprigs, adjust seasoning.
