Heat oil in large pot. Brown chicken pieces.
Add onions and cook until soft.
Add water and bring to boil.
Add potatoes and carrots, simmer 15 minutes.
Add curry roux and stir until dissolved.
Simmer 10 more minutes until thickened.
Season with soy sauce.
Serve over steamed rice.
