Texas-style chicken casserole with layers of tortillas, chicken, cheese, and spicy sauce. A family favorite comfort food.
Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
Sauté onion and bell pepper in butter until soft.
Mix both soups and diced tomatoes with chilies.
Layer half the tortillas in baking dish.
Top with half the chicken, vegetables, and soup mixture.
Sprinkle with half the cheese. Repeat layers.
Bake 30-35 minutes until bubbly and golden.
Let rest 10 minutes before serving.
