Colorful bell peppers stuffed with quinoa, vegetables, and cheese. A healthy, complete meal that's easy to make.
Preheat oven to 375°F (190°C).
Sauté onion and garlic until soft, about 5 minutes.
Mix cooked quinoa, black beans, corn, tomatoes, and spices.
Add sautéed onion and half the cheese.
Stuff bell peppers with quinoa mixture.
Place in baking dish with 1/4 inch water in bottom.
Cover and bake 35-40 minutes until peppers are tender.
Top with remaining cheese and bake 5 more minutes.
