Quinoa Stuffed Peppers

Ingredients

  • 4 large Bell pepperstops cut, seeded
  • 1 cup Quinoacooked
  • 1 can Black beansdrained and rinsed
  • 1 cup Corn kernelsfresh or frozen
  • 1 can Diced tomatoesdrained
  • 1 cup Cheddar cheeseshredded
  • 1 small Oniondiced
  • 2 cloves Garlicminced
  • 1 tsp Cumin
  • 1/2 tsp Chili powder

Instructions

    Preheat oven to 375°F (190°C).

    Sauté onion and garlic until soft, about 5 minutes.

    Mix cooked quinoa, black beans, corn, tomatoes, and spices.

    Add sautéed onion and half the cheese.

    Stuff bell peppers with quinoa mixture.

    Place in baking dish with 1/4 inch water in bottom.

    Cover and bake 35-40 minutes until peppers are tender.

    Top with remaining cheese and bake 5 more minutes.
