Light and fresh shrimp orzo with tomatoes, olives, and feta cheese. A perfect one-pot Mediterranean meal.

Cook orzo according to package directions. Drain and set aside.
Heat 2 tbsp olive oil in large skillet over medium-high heat.
Add shrimp and cook 2-3 minutes per side until pink. Remove and set aside.
Add onion and garlic to same skillet. Cook 2 minutes.
Add tomatoes and cook 3-4 minutes until softened.
Return shrimp and orzo to pan. Add olives, lemon juice, and oregano.
Toss everything together. Top with feta and parsley before serving.
