Delicious Mediterranean Shrimp Orzo - homemade recipe

Ingredients

  • 1 lb Medium shrimppeeled and deveined
  • 1.5 cups Orzo pasta
  • 2 cups Cherry tomatoeshalved
  • 1/2 cup Kalamata olivespitted and halved
  • 4 oz Feta cheesecrumbled
  • 1/2 medium Red oniondiced
  • 3 cloves Garlicminced
  • 3 tbsp Olive oil
  • 3 tbsp Lemon juice
  • 2 tbsp Fresh oregano
  • 1/4 cup Fresh parsleychopped

Instructions

    Cook orzo according to package directions. Drain and set aside.

    Heat 2 tbsp olive oil in large skillet over medium-high heat.

    Add shrimp and cook 2-3 minutes per side until pink. Remove and set aside.

    Add onion and garlic to same skillet. Cook 2 minutes.

    Add tomatoes and cook 3-4 minutes until softened.

    Return shrimp and orzo to pan. Add olives, lemon juice, and oregano.

    Toss everything together. Top with feta and parsley before serving.
