Spinach and Feta Quesadillas

Ingredients

  • 4 large Flour tortillas
  • 4 cups Fresh spinachchopped
  • 1 cup Feta cheesecrumbled
  • 1 cup Mozzarella cheeseshredded
  • 2 cloves Garlicminced
  • 2 tbsp Fresh dillchopped
  • 2 tbsp Olive oil
  • 1/4 tsp Red pepper flakes

    Sauté spinach with garlic until wilted. Drain excess water.

    Mix spinach with feta, mozzarella, dill, and red pepper flakes.

    Place filling on half of each tortilla.

    Fold tortillas in half to enclose filling.

    Heat olive oil in large skillet over medium heat.

    Cook quesadillas 3-4 minutes per side until golden.
